Potato CROQUETTES in Air fryer
ingredients
300g starchy potatoes, peeled and cubed
1 egg yolk
50g Parmesan cheese, grated
2 tbsp flour
2 tbsp chives, chopped finely (i used 1 tbsp dried Parsley flakes)
Pepper & Salt for seasoning (i used black pepper and garlic salt)
2 tbsp vegetable oil mix with 50g bread crumbs
Method
1. Boil potato cubes in salted water for 15mins or till soft. Drain and mash the potatoes. Allow to cool.
2. Add egg yolk, cheese, flour and chives to mashed potato. Season with pepper, salt and nutmeg.
3. Preheat air fryer to 200 degree C.
4. Shape croquettes and rolled in oiled bread crumbs.
5. Air-fry for 4-6 mins. (i kept the croquettes in the fridge as i prepared them quite early and had to air-fry for 5mins, turn and another 5mins)
Alternatively, you can also deep-fry these, just omit the vegetable oil from the bread crumbs.

ingredients
2 tablespoons milk
Salt
1/2 teaspoon pepper
1/2 teaspoon chopped green onion
2 egg yolks, beaten
3 tablespoons all-purpose flour
4 cups mashed potatoes
1 egg, beaten
Sifted dried bread crumbs
Peanut oil, enough to fill pan 1/2-inch
instructions
Add milk, salt, pepper, chopped onion, beaten egg yolks and flour to mashed potatoes. Chill and then shape using an ice cream scoop. Dip in the beaten egg, then roll through bread crumbs. Fry each croquette in shallow oil until brown on all sides.
Cook's Note: Cook in small batches, giving each croquette at least 2 inches of space around it to not overcrowd the pan. This prevents the croquettes from crumbling while frying.
